Ingredients
150 g | rice |
120 g | sweet corn |
12 | cherry tomatoes, quartered |
2 medium | eggs, hard boiled |
extra virgin olive oil | |
salt to taste |
Instructions
Hard boil the eggs. Boil the rice. Drain rice, just keep a little bit of the rice water and set aside.Cut the tomatoes into little pieces and set aside.
In a bowl mix together the rice, rice water, and sweet corn with some extra virgin olive oil and salt.
Cut the egg into little pieces and add to the rice mixture together with the tomatoes. Mix again and leave to chill in the refrigerator for about 30 minutes.
