Ingredients
700 ml | milk |
300 g | corn, cut from cobs |
3 | cobs broken in half and reserved |
2 tbsp | butter |
1 large | onion, chopped |
1 large | carrot, peeled, sliced |
1 stalk(s) | celery, thinky sliced |
500 ml | water |
2 large | thyme sprigs |
1 | bay leaf |
white pepper, ground |
Instructions
Bring milk and corncob halves to a boil. Remove from heat, cover, and set aside.Melt butter in large saucepan over medium heat. Sauté onion until soft, about 5 minutes Add corn, carrot, celery, and garlic. Cook until vegetables are soft, stirring frequently, about 10 minutes.
Add water, herb sprigs, bay leaf, and milk with corncobs. Increase heat and bring to a boil. Reduce heat to low, and simmer 20 minutes to blend flavours.
Discard corncobs, herb sprigs, and bay leaf. Leave soup to cool a bit and then purée soup in blender until very smooth.
Strain soup into large bowl, pressing on solids to extract as much liquid as possible. Season soup to taste with salt and white pepper.
