Ingredients
1 large | jam Swiss roll |
75 ml | sweet or medium sherry |
6 | kiwi fruit, peeled and sliced |
100 g | boudoir (finger) biscuits, broken |
50 g | almond nibs |
3 | egg whites |
125 g | castor sugar |
150 ml | semi-sweet wine |
30 ml | brandy |
15 ml | lemon juice |
300 ml | cream |
To decorate: | |
whipped cream | |
nuts | |
kiwi fruit slices |
Instructions
Slice the Swiss roll and arrange in a large glass bowl. Moisten with sherry.Place the kiwi fruit on the Swiss roll a top with the broken boudoir biscuits. Sprinkle with almonds.
Whisk the egg whites until stiff and then gradually add the sugar until very stiff. Add the wine, brandy, lemon juice and gently fold into the meringue.
Whip the cream until stiff and fold into the meringue mixture. Pour over the Swiss roll and fruit mixture.
Cover and refrigerate for 2 hours
Just before serving decorate with cream, nuts and fruit.
