Ingredients
1 ½ kg | pork belly, ask your butcher for a large thin piece |
For the stuffing: | |
1 | onion, finely chopped |
3 clove(s) | garlic, minced |
75 g | butter |
1 bunch(es) | mixed fresh herbs, finely chopped |
225 g | breadcrumbs |
1 | egg, beaten |
salt and pepper | |
For the paste: | |
2 tbsp | butter, melted |
1 tbsp | lemon juice |
2 clove(s) | garlic, minced |
2 tbsp | mustard |
2 tbsp | apple chutney |
For the sauce: | |
2 large | tart apples, peeled, cored and diced |
1 medium | onion, chopped |
2 clove(s) | garlic, minced |
2 sprig(s) | thyme |
125 ml | sweet white wine |
125 ml | chicken stock |
250 ml | single cream |
Instructions
For the stuffing:In a skillet, sauté the onion and garlic in butter. Add the herbs and the breadcrumbs. Mix well, then allow to cool. Stir in the egg and season with salt and pepper.
For the roast:
Preheat the oven to 150°C. Remove the skin and excess fat of the meat.
Mix all ingredients for the paste. Brush the meat with 2/3 of the mixture. Evenly divide the stuffing on the meat, then roll up the pork belly. Tie up with kitchen string.
In large skillet in hot oil, sear the pork from all sides. Transfer on the rack in the middle of the oven and place a dripping pan underneath. After half of the roasting time, turn the meat and brush with the remaining paste.
For the sauce:
Put all ingredients into a saucepan and bring to a boil. Simmer for 15 minutes. Remove the thyme, then purée the sauce with a hand blender.
Carve the pork roast and serve with the sauce, together with mashed potatoes, vegetables and salad.
