Stuffed pork roast recipe details
Ingredients
2 ½ kg | pork center loin |
2 tbsp | Dijon mustard |
salt and freshly ground black pepper, to taste | |
3 | onions, chopped |
60 g | butter |
250 g | oyster mushroom, sliced |
3 | tomatoes |
1 bunch(es) | parsley |
150 g | Cheddar cheese |
250 g | single cream |
Instructions
Preheat the oven to 200°.Slice the meat lengthwise, flatten, brush the inside with mustard and season with salt and pepper.
Sauté the onions in hot oil until lucent. Add the mushrooms and sauté until slightly golden. Plunge the tomatoes in boiling water for 30 seconds, then rinse them with cold water and remove the skin and seeds. Cut the tomatoes in small pieces and add them together with the chopped parsley to the mushrooms and cook for a minute.
Evenly divide the mixture on the flattened pork. Dice the cheese and sprinkle it over the meat. Roll up the pork loin and tie it well with kitchen string. Season the meat on the outside with salt and pepper. Transfer the roll into a roasting tin and roast for approximately 60 minutes. During the roasting time brush the pork occasionally with melted butter and pour a little water into the tin if necessary.
When the pork roast is tender, take it out of the tin and allow to set for 10 minutes. Then remove the kitchen string and wrap the roast in kitchen foil to keep warm.
Sieve the gravy from the roasting tin into a saucepan, pour in the single cream and cook over medium heat until the sauce thickens. Season to taste with salt and pepper.
Cut the roast pork in neat slices and serve warm or cold with the gravy and potato pancakes.
