Ingredients1. Fresh or frozen and thawed farm raised catfish fillets (4 about 1 ½ pounds)
2. lemon juice (1tsp)
3. pepper (1/4tsp)
4. salt (1/2tsp)
5. bacon (8slices)
For stuffing Ingredients
1. Dried parsley (1tsp)
2. chopped celery (1tbsp)
3. light cream cheese (3tbsp)
4. pepper (1/4tsp)
5. salt (1/2tsp)
6. chopped onion (1tbsp)
7. lemon juice (2tsp)
8. fresh and soft bread crumbs (1c)
9. ground thyme (1tsp)
Method of preparation
1. Take fish in a bowl, season it with ¼ teaspoon of pepper and ½ teaspoon of salt and then sprinkle 1 teaspoon of lemon juice over it.
2. Take a bowl to prepare stuffing, add cream cheese in it and then mix the bread, thyme, parsley, onion, celery and 2 teaspoon of lemon juice in it. Mix all these ingredients properly.
3. Then divide this mixture into 4 parts. Place one part of mixture on each fillet and then roll the fish fillets to cover the stuffing mixture. Now fry the bacons until they get cooked and then wrap them around the fish fillets. Secure the rolls with toothpicks.
4. Take a baking dish, grease it lightly and then place the rolls of catfish in it. Now place the dish in oven and bake it for 15 to 20 minutes at 350 degrees F until it gets flake easily with fork. When the stuffed fish gets ready then serve it with lemon wedges.
