Ingredients
4 large | potatoes |
60 g | butter |
125 g | freshly grated Cheddar cheese |
125 g | canned tuna, drained |
1 | egg yolk |
salt and freshly ground black pepper | |
nutmeg | |
1 tbsp | fresh chives, chopped |
1 tbsp | cress |
Instructions
Preheat the oven to 200°C. Wrap the potatoes with aluminium foil and place onto a lined baking tray. Bake for 40-45 minutes or until soft. Allow to cool a bit. Unwrap and half the potatoes. Scoop out some pulp, leaving a solid shell.Mash the potato pulp and combine with tuna, cheese, egg yolk and the herbs. Season to taste with salt, pepper and nutmeg. Fill the potatoes with the mixture and place a generous butter flake on top of each. Bake for 15-20 minutes or until golden brown.
Serves with fresh salad as a main dish for 2 or as a snack or starter for 4.
