Ingredients
500 g | strawberries, washed, hulled, sliced |
80 g | sugar |
60 ml | fresh orange juice |
For the waffles: | |
200 g | flour |
2 tsp | baking powder |
½ tsp | salt |
4 large | eggs, separated |
2 tbsp | sugar |
500 ml | milk |
4 tbsp | butter, unsalted, melted |
½ tsp | vanilla extract |
Instructions
Strawberries:Place slices strawberries in a mixing bowl.
In a saucepan combine sugar and orange juice and bring to a boil over medium heat. Stir until sugar is dissolved. Remove from heat and pour over sliced strawberries. Toss well and leave to set.
Waffles:
Sift flour, baking powder and salt into a bowl. Set aside.
In another bowl,beat together egg yolks and sugar until sugar is well combined with the eggs and the eggs have turned a pale yellow.
Add milk, melted butter and vanilla to eggs and whisk to combine.
Combine flour and egg mixture and whisk just until blended.
In another bowl, beat egg whites with an electric mixer until soft peaks form, about 1 minute. Gently fold egg whites into waffle batter.
Grease waffle iron and pour enough batter in the iron to just cover waffle grid. Cook waffles until golden brown, about 2-3 minutes.
Serve waffles immediately with the strawberry topping spooned over each waffle.
