Ingredients
For the Filling: | |
1 ¼ kg | fresh strawberries, hulled, halved if especially large |
175 g | white sugar |
40 g | quick-cook tapioca |
For the pastry: | |
175 g | plain flour |
½ tsp | salt |
50 g | hard white cooking fat |
2 tbsp | water, maybe more |
40 g | light brown sugar |
½ tsp | cinnamon |
Instructions
Preheat oven to Gas Mark 6, 200°C, 400°F.To make the filling:
Combine ingredients in a large bowl and set aside.
To make the pastry:
Combine flour and salt in a bowl. Cut in the fat with a knife until uniform but coarsely textured. Reserve 20-25% of the mixture as a topping.
To the remaining mixture, sprinkle in the water and toss with a fork and press together into a ball. Add a little more water should it not quite come together, but keep amount to a minimum.
Roll out pastry on a lightly floured surface and use to fully line a deep 8-inch, 20cm pie dish. Fill with strawberry mixture. Trim surplus pastry.
Cover the open pie with foil, trying not to cover the pastry, and bake for 35 minutes.
Blend the reserved topping mixture with the cinnamon and brown sugar.
Remove the pie from the oven, remove the foil and sprinkle topping mixture over the filling. Return pie to oven on a baking sheet for a further 30-40 minutes or until the topping is well browned. Allow to cool until warm before serving.
