- Ingredients
- 12 slices bread, remove crust and cut into cubes (I use sour French)
- 1-1/2 cups diced ham (I use turkey ham)
- 1 pound fresh asparagus or canned, cut into 1-2 in pieces (if you use fresh, boil or stream them 4 minutes only)
- 2 full cups or more cheddar cheese (you can mix cheddar with Jack cheese)
- 7 eggs
- 2 Tablespoons minced instant onion
- 1 teaspoon salt
- 2 teaspoons dry mustard
- 3 cups milk
Quick and Easy!
Grease well with butter a 9 x 13-inch inch pan (glass) and place bread in 2 layers on the bottom. I sprinkle a little cheese on the bread. then layer the chopped ham, the layer the asparagus, then the cheese, and then pour the egg mixture on top. Cover with plastic wrap and let sit overnight in the refrigerator. In the morning bake in a 350 degree oven for about 50 minutes.
Note: If you use a smaller pan, such as 7 x 11 inches, use 5 eggs, 1-3/4 cup milk, 3/4 teaspoon dry mustard, 1/4 teaspoon salt, and as much bread as you need (about 8 slices).
There are variations. Mexican-style using chopped green chilis, black olives, and Roma tomatoes (seeded and chopped). To the milk mixture, add cumin and chili powder, 1/2 to 3/4 teaspoons each.
