Ingredients
1 | yellow bell pepper, cut into bite-sized pieces |
1 clove(s) | garlic, minced |
250 g | courgette, sliced |
2 tbsp | olive oil |
salt and freshly ground black pepper | |
4 sprig(s) | basiil, chopped |
175 g | cream cheese |
2 tbsp | lemon juice |
1 | stotty, halved |
Instructions
In a pan, heat the oil. Fry the courgette, bell pepper and garlic until soft and golden. Season with salt and pepper. Take from the heat and set aside.Mix the cream cheese with lemon juice and basil and season to taste with salt and pepper. Spread the stotty halves with the basil cream and top with the vegetables. Cut into pie pieces and serve.
