Ingredients
1 medium | onion |
2 clove(s) | garlic |
3 large | ripe tomatoes |
4 tbsp | olive oil |
500 g | okra |
salt | |
½ | lemon, juiced |
2 tbsp | freshly grated ginger |
2 tsp | ground coriander |
½ tsp | turmeric powder |
Instructions
Peel and finely chop the onion and the garlic. Peel and dice the tomatoes.In a skillet, heat the oil and sautè the onions, garlic and tomatoes. Add the okra and season with a little salt and lemon juice. Cook over medium heat for approximately 15 minutes. Stir in the ginger, coriander and turmeric and cook for another 10 minutes. Season to taste with salt and lemon juice.
