St. Timothy’s Coffee Cake recipe

- Ingredients:
- 2 cups flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup chopped pecans
- 1/2 cup raisins
- 2 sticks of margarine
- 2 cups of sugar
- 1/2 teaspoon vanilla
- 2 eggs
- 1 cup sour cream
- cinnamon sugar
Instructions:
Preheat oven to 350 degrees. Sift together flour, baking powder, salt, and cinnamon. Add pecans and raisins to dry ingredients and stir to coat. Cream margarine until light and fluffy. Add sugar gradually and continue to cream. Blend in vanilla. Add eggs one at a time, beating well after each one. Add dry ingredients to creamed mixture alternately with sour cream. Blend well until batter looks like whipped cream tinged with honey. Turn into greased bundt pan.
Bake for 1 hour or until tester inserted in coffee cake comes out clean. Remove from oven and leave in pan for one hour. Shake pan to loosen, then turn out on wire rack. Just before serving, sprinkle the top of the coffee cake with cinnamon sugar.
