Springtime Casserole recipe

Ingredients
450 g | rice |
230 g | peas |
2 tbsp | fresh parsley, chopped |
1 small | onion, chopped |
some | olive oil |
4 medium | eggs |
80 g | butter, melted |
60 g | Cheddar cheese, grated |
1 tsp | salt |
Instructions
Grease a large baking pan. Preheat oven to 180°C.
Cook rice and peas until just tender. Drain.
In a saucepan, sauté onions in oil for 2 minutes.
Combine rice, peas, parsley, onion and butter and 30g of the grated cheese in a medium bowl. Toss lightly and spread evenly in the buttered pan.
Make 4 wells in the rice mixture and drop one uncooked egg in each well. Sprinkle remaining cheese over the top.
Bake for about 30 minutes, or until the eggs are set.
