Ingredients
Serves: 2- 1/4 cup pine nuts
- 1 tablespoon chopped ginger
- 5 cloves garlic
- 1/2 white onion
- 15 basil leaves
- 1/4 cup crumbled feta cheese
- salt and ground black pepper to taste
- 2 chicken breasts
- 1 cup corn meal
- 1/2 cup grapeseed oil, olive or canola oil
Preparation method
Prep: 15 mins | Cook: 25 mins1. Chop pine nuts finely with a knife or with a chopper. Add the ginger, garlic, onion, and basil and continue to chop. Add the feta, and salt and pepper to taste, and stir together.
2. Take chicken breasts and with a very sharp knife cut a pocket into the chicken keeping the hole as small as possible. Stuff each chicken breast with about 2-3 tablespoons of the stuffing. After filling with stuffing coat each side of the chicken breast with corn meal. Pour oil into pan on medium heat, and then place chicken breast in pan. Cook until both sides are browned and chicken is no longer pink inside, flipping as needed, about 25 minutes.
