Ingredients
12 | spring onions, peeled and halved |
1 clove(s) | garlic |
30 g | butter |
1 large can(s) | sweet corn |
200 g | Feta cheese, crumbled |
100 g | lettuce |
3 tbsp | vegebtable oil |
2 tbsp | sherry vinegar |
3 tsp | honey |
3 tsp | parsley, chopped |
1 tsp | lemon juice |
salt and pepper, to taste |
Instructions
Preheat the oven to 200°C.Melt the butter in a roasting tin and add spring onions and garlic. Season with salt and pepper. Roast for 10-15 minutes until the onions are tender. Remove the onions from the tin and set aside.
Squeeze the roasted garlic out of its skin and mash into the remaining liquid in the tin. Stir in the oil, vinegar, honey, lemon juice, parsley and sweet corn and mix well.
Wash and spin dry the lettuce and arrange the leaves on a serving plate. Add the roasted spring onions. Pour the dressing out of the tin together with the sweet corn over the onions. Sprinkle the salad with the Feta cheese.
