Ingredients
Makes: 4 1 cup servings- 2 Tablespoons Lard, butter, or bacon or sausage drippings (oh, if you *must*, you can use canola or vegetable oil)
- 1/2 small yellow onion, minced (about 1/4-1/2 cup)
- 2 Tablespoons all purpose flour
- 2 cups whole milk (reconstituted powdered whole milk is just fine)
- 2 large New Mexico #6 or Big Jim green chiles, roasted, peeled, seeded and diced (or 1 4-ounce can of diced green chiles)
- 1 teaspoon kosher (or sea) salt
- 1 teaspoon coarse ground black pepper
Preparation method
Prep: 10 mins | Cook: 10 mins1. In a saucepan over medium high heat, heat the fat until just below the smoking point.
2. Add the minced onion and sauté until softened and beginning to turn golden around the edges (about 5 minutes).
3. Whisk in the flour until well combined. Continue whisking or stirring for a minute or two to cook out the raw flour flavor.
4. Slowly whisk in the milk.
5. Add the green chiles. Whisking constantly, bring the gravy to a boil to thicken it, then reduce the temperature to a simmer.
6. Season the gravy with the salt and pepper.Serving suggestion
Use with your regular country fried steak or pork chops, fresh trout right out of the river, over mashed potatoes or biscuits, with eggs…hell, like the man says, it would probably taste good on the bumper of a car!
TipNote that the ingredients can be carried to a camp site. This is a great camping sauce!
