Ingredients

3  eggs
1  egg yolk
50 g sugar
1 tsp vanilla extract
60 g flour
1 tsp baking powder
4 leaves gelatin
200 g cottage cheese
250 g curd cheese
4 tbsp honey
50 g green grapes, seedless
50 g blue grapes, seedless
2 tbsp icing sugar, to dust

Instructions

Preheat the oven to 200°C.

Whisk the eggs and the egg yolk until creamy. Trickle in the sugar and the vanilla extract. Combine the flour and the baking powder, then sieve on top of the egg mixture and fold in.

Spoon the sponge mixture in 9 circles (with a diameter of approximately 10 cm) on a lined and greased baking tray. Bake for 12 minutes.

Immediately turn out the sponge cakes on a wire rack, lined with parchment paper. Fold the sponge cakes to half moons.

Soak the gelatin in cold water, squeeze and heat in a small saucepan until dissolved. Stir together the cottage cheese, curd cheese and honey. Little by little stir the mixture into the dissolved gelatin. Allow to set in a cool place for approximately 30 minutes.

Halve the grapes and fold them into cheese cream and allow to set for further 30 minutes.

Fill the sponge cakes with the cream, dust with icing sugar and leave in a cool place until served.
