Ingredients
For the Filling: | |
230 g | cream cheese |
4 medium | eggs |
240 ml | evaporated milk |
¼ tsp | red pepper, ground |
300 g | frozen spinach, thawed |
1 medium | onion, diced |
For the pie crust:: | |
100 g | butter, room temperature |
150 g | flour |
¼ tsp | salt |
4 tbsp | cold water |
Instructions
Making the crust:Combine flour and salt in a bowl. Add butter and whisk until butter is pea sized. Add cold water and mix with a fork until batter is blended completely.
Roll out dough very thinly and place into greaced oven proof dish. Bake crust for 8 minutes at 200°C.
Quich filling:
Beat cream cheese with an electric mixer until creamy. Beat in eggs, evaporated milk and red pepper. Mix again.
Squeeze spinach between paper towels until almost dry and then stir spinach and onion into egg mixture.
Pour mixture into pie crust. Bake quiche at 180°C for 55 to 65 minutes, or until a knife inserted in center comes out clean.
