- Ingredients:
- 5 eggs, beaten
- 1 small carton (or half of a 16-ounce carton) small curd cottage cheese
- 1/2 package frozen spinach, squeezed dry
- 2 cups grated cheese (use half Monterey Jack and half cheddar)
- Good sprinkling of Schilling Onion Plus Seasoning
Mix all ingredients together. Pour into unbaked (frozen is fine) pie shell. Bake 50 to 60 minutes at 375 degrees. Let it sit 5 to 10 minutes before cutting. This is great served with fresh fruits for breakfast or a green salad for lunch or dinner.
Note: Leftovers do not freeze well; quiche gets watery.
