Ingredients
1 kg | fresh spinach, washed and chopped |
2 | onions, chopped |
2 clove(s) | garlic, chopped |
5 tbsp | olive oil |
2 | eggs |
7 tbsp | milk |
80 g | rice |
150 g | Parmesan cheese, grated |
some | butter |
salt and pepper |
Instructions
Preheat the oven to 180°CIn a saucepan, heat the oil. Add the garlic and onions and sauté until lucent. Stir in the wet spinach and stew until the spinach has wilted. Take the pan from heat.
In a bowl, mix the eggs with milk and rice. Stir the mixture into the spinach. Add 1/3 of the cheese. Season with salt and pepper.
Transfer the spinach mixture into a buttered casserole. Sprinkle with the remaining cheese and bake for 30 minutes.
