Ingredients
20 ml | butter |
5 small | leeks, thinly sliced |
300 g | potatoes, peeled and cubed |
500 ml | vegetable stock |
3 handful | spinach, washed and cut up |
125 ml | cream |
black pepper, to taste | |

Instructions
Sauté leeks in butter. Add stock and potatoes, cook until soft. Add spinach until just cooked. Process to a smooth consistency and add the cream. Reheat if necessary.Serve with black pepper, croutons or crispy, crumbly bacon bits.
