Ingredients
400 g | fresh spinach, trimmed and washed |
1 | onion, chopped |
1 clove(s) | garlic, finely chopped |
4 tbsp | olive oil |
400 g | risotto rice |
800 ml | vegetable stock |
125 g | Gorgonzola cheese |
salt an pepper |
Instructions
Put the spinach dripping wet into a saucepan and heat until wilted. Remove from the pan and set aside.Heat olive oil in a saucepan and briefly sauté onions and garlic over low heat. Add the rice and cook stirring until translucent. Add the stock and bring to a soft boil. Simmer for about 15 minutes, stirring frequently.
Chop the cooled spinach leaves coarsely, combine with the rice and continue to cook for another 5 minutes. The risotto should become slightly creamy but still a bit firm to the bite. If too firm, add more stock and cook for a few more minutes.
Chop the Gorgonzola coarsely. Remove the risotto from the heat and fold in the cheese. Season to taste with salt and pepper. Serve immediately.
