Ingredients
Serves: 12- 1/4 cup flour
- 1 1/2 pounds boneless pork loin, cut into 1/2-inch cubes
- 2 tablespoons butter
- 1 jalapeno pepper, seeded and chopped
- 2 garlic cloves, minced
- 2 cups beef broth
- 1 (14 1/2 ounce) can diced tomatoes
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon ground cinnamon
- 1 (15 1/4 ounce) can corn, drained
- 1 (15 ounce) can pinto beans, drained and rinsed
- 1 (4 ounce) can chopped green chiles
- Biscuit Topping:
- 3 cups baking mix
- 3/4 cup cornmeal
- 1/2 cup shredded Cheddar cheese
- 4 1/2 teaspoons sugar
- 1 cup milk
Preparation method
Prep: 25 mins | Cook: 1 hour 15 mins1. Toss pork with flour to coat. Melt butter in a large Dutch oven over medium heat; cook pork chunks in melted butter until the outsides are seared to a golden brown color. Take out of the Dutch oven and place on a plate.
2. Add jalapeno and garlic to the Dutch oven and cook for 1 minute, then stir in broth, tomatoes, cumin, chili powder, cinnamon, and pork. When mixture boils, simmer covered for 1 hour on low heat. Pork should be very tender.
3. Preheat oven to 400 degrees F and coat a 13×9-inch baking dish with nonstick cooking spray.
4. Stir corn, beans, and green chiles into the Dutch oven. Let the mixture cook for a few more minutes so the corn and beans can warm up. Pour into prepared baking dish.
5. Whisk baking mix, cornmeal, cheese, and sugar together in a separate bowl. Add the milk and stir until dough forms a ball.
6. Sprinkle some flour onto a cutting board and transfer the dough ball to the surface. Knead a few times until the dough is smooth, then roll out to 1/2-inch thickness. Cut into squares and place on top of the pork mixture in the baking dish.
7. Bake for 15 to 18 minutes, until biscuits are lightly browned. Remove from oven, let stand for 10 minutes, and serve.
