A savory/spicy mix of feta cheese, pickled jalapenos, and roasted tomatoes is the perfect flavor combination for cooked shrimp.

Ingredients

- 8 small tomatoes
- 2 tablespoons olive oil
- 4 flour tortillas, warmed
- 1 avocado, peeled and sliced
- 16 small cooked shrimp, peeled
- 1 cup crumbled feta cheese
- 1 tablespoon chopped pickled jalapeno chiles, drained
Preparation method
Prep: 10 mins | Cook: 20 mins
1. Preheat oven to 350 degrees F.
2. Place tomatoes on a baking sheet and drizzle with oil. Bake for about 20 minutes to soften.
3. Fill each tortilla with tomatoes, avocado, shrimp, feta, and jalapeno. Serve.
