Spicy Shepherds Pie recipe

Ingredients
1 kg | potatoes |
50 g | butter |
3 tbsp | milk |
1 tbsp | oil |
1 large | onion, finely chopped |
2 clove(s) | garlic, crushed |
fresh root ginger, 2,5cm, peeled and finely grated | |
3 tbsp | medium or hot curry paste, see my recipes in the database |
1 tbsp | tomato puree |
400 g | lean minced lamb |
1 tsp | salt |
200 g | carrot, finely diced |
140 ml | beef stock |
1 tbsp | Worcestershire sauce |
Instructions
Boil potatoes in some salted water until tender. Drain, add butter, milk and a little salt and pepper and mash until smooth. Set aside.Heat oil in a large non-stick pan. Add onion, garlic and ginger and fry over a low heat for 5 minutes until softened. Add curry paste, tomato puree, minced lamb, salt and carrot and cook for about 5 minutes, stirring, or until mince is browned all over. Stir in beef stock and Worcestershire sauce and cook for 5 minutes, then remove from heat, pour into pie dish and level out. Cover with mashed potato and drag a fork over the top to create ridges.
Place in a pre-heated oven on gas mark 5 or 210 C degrees for electric and cook for 45 minutes. Serve as required.
