Ingredients
1 large | onion |
2 tbsp | oil |
2 clove(s) | garlic |
300 g | red lentils |
1 ½ l | vegetable stock |
2 | carrots |
½ | red bell pepper |
½ | red chili pepper |
3 tbsp | tomato puree |
lemon juice | |
200 ml | milk |
¼ tsp | hot paprika powder |
salt and pepper | |
½ bunch(es) | coriander leaves or basil, chopped |
150 g | yoghurt |
Instructions
Dice the onion. In a skillet, heat the oil and sauté the onion. Press in the garlic. Add the lentils and the vegetable stock and bring to the boil.Peel the carrots, cut into slices and add to the soup. Cut the chili into thin slices and add into the soup. Stir in the tomato purée and the milk. Season with lemon juice, paprika powder, salt and pepper. Cook over low heat for 10 minutes. Check seasoning and correct if necessary.
Serve the soup with yoghurt and coriander.
