Ingredients
1 kg | pumpkin, peeled, seeded, sliced |
5 tbsp | olive oil |
1 clove(s) | garlic, peeled, whole |
1 tbsp | granulated sugar |
1 pinch(es) | cinnamon, ground |
120 ml | white wine vinegar |
fresh mint leaves |
Instructions
Heat the olive oil in a shallow pan and fry the pumpkin with the garlic clove for about 3 minutes, discarding the garlic just before it starts to burn. When all the pumpkin slices are fried, return them to the pan, draining off any excess oil. Remove from heat.Sprinkle the pumpkin slices with the sugar and cinnamon. Toss and then sprinkle with the vinegar and mint. Cover with a large plate, and leave to infuse for 30 minutes before serving.
