Ingredients
450 g | whole cooked prawns |
2 clove(s) | garlic |
1 | stick lemon grass |
2 ½ cubic cm | piece fresh ginger |
pinch(es) | ground coriander, cumin, turmeric, paprika & chilli flakes |
1 tsp | garam masala |
1 | star anise |
1 bunch(es) | basil, small |
½ tsp | caster sugar |
50 g | spaghetti |
2 tsp | sesame oil |
finely grated zest 1/2 lemon, to serve | |
basil leaves, to serve | |
½ tsp | peeled & finely chopped root ginger, to serve |
Instructions
Peel the prawns and put the heads and shells into a food processor.Chop the unpeeled garlic, lemon grass and ginger, then put in the processor and blitz for a few seconds.
Heat a large pan and then, when almost smoking, add the prawn paste and stir-fry for 1 minute. Add the spices and half the Garam Masala and cook again for a few seconds. Stir in the star anise and basil, and then pour in 850ml (1 1/2 pints) water. Season well, bring to the boil and simmer for 10 minutes.
Add sugar to the stock, then strain into a clean pan. Return to the boil then break in the spaghetti. Cook for 5 minutes.
Meanwhile, fry the prawns in sesame oil with the remaining Garam Masala. Add to the soup, taste and adjust the seasoning.
Ladle the soup into large bowls and sprinkle over the lemon zest, basil and ginger before serving.
