Ingredients
400 ml coconut milk |
2 parsnips, peeled and sliced |
6 potatoes, peeled and diced |
1 onion, chopped |
3 clove(s) garlic, minced |
2 apples, peeled, cored and finely diced |
50 g butter |
salt and freshly ground black pepper |
½ tsp turmeric powder |
2 tsp curry powder |
600 ml vegetable stock |
ground coriander |
cayenne pepper |
4 tbsp parsley |
Instructions
In a saucepan, melt the butter. Sauté the onion and the garlic. Add the parsnip and the potatoes and cook stirring for 2-3 minutes.
Stir in curry powder and turmeric. Add the apples and pour in the stock. Bring to a boil. Reduce the heat and simmer for 20 minutes.
Purée the soup.
Pour in the coconut milk. Season to taste with salt, pepper, cayenne pepper and coriander. Reheat and simmer for 2-3 more minutes.
Serve sprinkled with the parsley.
