Chestnut Apple and Parsnip Soup recipe

Ingredients
25 g | butter |
2 medium | parsnips, peeled and chopped |
2 stick(s) | celery, chopped |
2 | apples, peeled and chopped |
200 g | roasted chestnuts, peeled and chopped |
800 ml | chicken or vegetable stock |
Instructions
Melt the butter in a large pan then add the parsnips, celery, and any seasoning. Stir over a high heat for 4-6 minutes until the parsnips are lightly golden brown.
Add the apples and cook for 4-5 minutes, stirring occasionally.
Add the chestnuts and stock then simmer for 5-10 minutes until the parsnips are soft.
Pour into a blender and blend until smooth.
Note:You can leave out the chestnuts if you wish.
