Ingredients
Serves: 6- 1 tablespoon olive oil
- 1 onion, chopped
- 2 green bell peppers, chopped
- 2 jalapeno peppers, seeded and chopped
- 3 garlic cloves, minced
- 2 (28 ounce) can crushed tomatoes
- 1 (16 ounce) can kidney beans, rinsed and drained
- 1 (15 ounce) can black beans, rinsed and drained
- 32 ounces chicken broth
- 3 tablespoons chili powder
- 1 tablespoon ground cumin
- 1/4 cup Louisiana-style hot pepper sauce
- 2 1/2 cups cooked chicken
Preparation method
Prep: 15 mins | Cook: 25 mins1. Grab a large soup pot or Dutch oven. Put it over medium heat, pour in the oil, and heat it up. Add the onion, bell pepper, jalapeno, and garlic, and saute in hot oil until just starting to soften, about 6 minutes. Then add the rest of the ingredients, except for the chicken.
2. Bring to a boil, then simmer for 15 minutes. Add chicken, then simmer for another 5 minutes. Serve with cheese shredded over the top, if you’ve got it.Cooked chicken?
