Ingredients
Serves: 6- 1/3 cup raisins
- 2/3 cup milk
- 1 1/2 pounds lean ground beef
- 1/2 cup chopped onion
- 1/4 cup chopped pimiento stuffed olives
- 1 egg, beaten
- 1 tablespoon tomato paste
- 1/2 cup plain bread crumbs
- 4 canned chipotle peppers in adobo sauce, diced
- 2 teaspoons adobo sauce
- 1 1/2 teaspoons ground cinnamon
- 1/8 teaspoon ground cloves
- 2 teaspoons light brown sugar
- 1/2 teaspoon ground cumin
- 3/4 cup mild Cheddar cheese, shredded
- Shredded mild cheddar cheese
Preparation method
Prep: 16 mins | Cook: 1 hour 15 mins1. In small saucepan, cook raisins in milk over low-medium heat for 4 minutes or until plump; cool.
2. Preheat oven to 350 degrees F.
3. In large mixing bowl, thoroughly mix beef with raisin mixture and all the remaining ingredients, except the cheese.
4. Press half the meat mixture into an 8×4-inch loaf pan. Using the back of a large spoon, press a 1/4-inch deep indentation lengthwise in center of beef mixture. Press cheese into indentation. Press remaining beef on top, covering cheese completely.
5. Bake meatloaf for 1 1/4 hours.
6. Sprinkle surface of meatloaf with shredded cheddar cheese. Return to oven just until cheese melts.
