Ingredients
6 | eggs, boiled (about 15 mintes) |
2 medium | onions, finely chopped |
2 | tomatoes, chopped |
4 | green chillies, chopped |
4 | red chillies, chopped |
1 tbsp | garlic paste |
1 tbsp | ginger paste |
1 tbsp | coriander powder |
1 tbsp | cumin powder (jeera) |
1 tsp | turmeric powder |
200 g | yoghurt |
some | chicken stock |
salt | |
6 tbsp | soy oil |
some | green coriander leaves, for garnishing, chopped or chopped spring onions |
Instructions
Heat the oil in a wok, fry the onions on low heat till they are brown. Add tomatoes, fry some more minutes. Add garlic and ginger paste and fry a bit longer. Add the red and green chillies, coriander powder, cumin powder, turmeric powder and salt as well as a cup of water and cook it till the oil starts to bubble. Stir in the yoghurt. Keep stirring the mixture on high heat till it starts to boil. Add chicken stock, stir well. Cook on low heat till it has an oily red colour.Cut the boiled eggs in 2 halves each and add to the curry. If you like, fry egg halves in hot oil, the cut side down. When they are golden brown, turn and fry the other side.
Garnish with minced green coriander leaves (or chopped spring onions instead) and serve with hot chapatis or rice.
