Ingredients
3 | eggplants |
1 tbsp | olive oil |
30 g | tahini paste |
1 tbsp | minced garlic |
4 tbsp | lemon juice |
¼ tsp | salt |
¼ tsp | pepper |
Instructions
Preheat oven to 200°C.Place eggplant on lightly greased baking sheet and roast until eggplant is tender, about 30 minutes. Remove from oven and allow to cool.
Peel the skin off the roasted eggplant and set aside.
Combine and tahini paste, garlic, and pepper and in a blender and process for 10 seconds. Add in eggplant and blend for another 20 seconds. Add in olive oil and blend for further 10 seconds.
Place mixture in a serving bowl and stir in lemon juice and sprinkle with salt and pepper.
