Ingredients
Serves: 6- 1 1/4 cups chicken broth
- 3/4 cup chopped onion
- 3/4 cup frozen corn
- 1 celery rib, chopped
- 1/4 teaspoon cayenne pepper
- 3 cups crushed corn bread stuffing
- 6 (6 ounce) boneless pork loin chops
- 2 tablespoons brown sugar
- 2 teaspoons spicy brown mustard
Preparation method
Prep: 15 mins | Cook: 25 mins1. Preheat oven to 400 degrees F and coat a 13×9-inch baking dish with nonstick cooking spray.
2. Combine chicken broth, onion, corn, celery, and cayenne in a saucepan. Set over medium-high heat. When broth boils, turn off heat and add stuffing.
3. Pour stuffing into the prepared baking dish. Set pork chops on top.
4. In a small bowl, whisk sugar together with mustard. Brush over pork chops.
5. Bake for about 25 minutes, until pork chops reach an internal temperature of 160 degrees F. Serve.
