Ingredients
250 g | rice |
50 g | currants |
1 large | tomato |
40 g | butter |
50 g | pine nuts |
¾ l | vegetable stock |
½ tsp | ground allspice |
1 pinch(es) | ground cinnamon |
1 pinch(es) | ground cumin |
salt and pepper | |
1 pinch(es) | saffron powder |
Instructions
In a sieve, rinse the rice with cold water, then drain well. Soak the currants in water. Peel and dice the tomato.In a saucepan, melt the butter and sauté the tomato and the pine nuts. Pour in the vegetable stock and bring to the boil. Stir in the rice. Season with pepper, allspice, cinnamon, cumin, saffron and salt. Add the currants and ring to the boil. Cover and simmer over low heat for 20 minutes.
Remove the saucepan from the heat and place a kitchen towel between the lid and the saucepan, so that the towel will absorb the steam and makes the rice nicely dry.
