- Ingredients for pancakes:
- 3 egg yolks
- 1-3/4 cups buttermilk
- 1-1/2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 Tablespoon sugar
- 3 Tablespoons butter
- 2 teaspoons ground ginger
- 1 teaspoon cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 2 teaspoon molasses
- 3 egg whites, stiffly beaten
- Ingredients for Lemon Sauce
- 1 cup sugar
- 2 Tablespoons corn starch
- 2 cups water
- 1/4 cup butter
- 2 Tablespoons grated lemon rind
- 1/4 cup lemon juice
Pancakes:Beat the egg yolks with an electric mixer. Add remaining ingredients, except egg whites and beat until smooth. Gently fold in whipped egg whites. Pour batter by 1/4 cupfuls onto greased hot griddle. Flip when they are puffed and full of bubbles. Cook until golden.
Sauce:Combine the sugar and corn starch in a saucepan. Gradually add water and bring to a boil. Cook over medium heat, stirring constantly, or 5 minutes, or until thickened. Remove from heat. Stir in butter, lemon rind and lemon juice. Mix well and serve warm.
