Spanish Shrimp Fritters recipe

Ingredients
500 g | small shrimp, peeled |
250 g | chickpea flour (or plain flour) |
2 tbsp | chopped parsley |
2 | spring onion, chopped |
½ tsp | paprika powder |
salt | |
olive oil for deep-frying |
Instructions
Wash the shrimp and place into a saucepan. Cover with water and bring to a boil. As soon as the water starts boiling, take the shrimp out but keep the cooking water for later use. Let shrimp and water cool down.
For the batter combine flour, parsley, spring onion, paprika powder, a pinch of salt and so much of the cooled cooking water until you have a thick batter. Refrigerate for 1 hour. Mince the shrimp in a food processor and add to the batter, mix until well combined.
Shape the batter to tablespoon sized dumplings and deep fry in hot olive oil.
