Ingredients
50 g | butter |
2 tbsp | olive oil |
4 tbsp | flour |
400 ml | milk |
100 g | Serrano ham (or any dry-cured ham) |
salt | |
2 | eggs |
breadcrumbs | |
oil for deep-frying |
Instructions
Heat the olive oil and the butter in a saucepan. When the butter has melted add the flour and whisk until well combined. Add the milk and go on whisking for approximately 3-5 minutes until the sauce thickens. Stir in the ham. By now the mixture should be thick but without lumps. Season to taste with salt, but carefully, the ham is already salty.Spread the mixture on a baking sheet and allow to cool completely, then cover and place in the fridge for 2-3 hours or until set.
Brake the eggs into a bowl, and pour the breadcrumbs onto a plate. Shape from the ham mixture small croquettes and toss carefully each croquette in the breadcrumbs, then in the eggs, and once more in breadcrumbs. Let rest again for 30 minutes in the fridge.
Deep-fry in hot oil until golden brown.
