Ingredients
1 | onion, chopped |
3 clove(s) | garlic, chopped |
1 l | vegetable stock |
1 large can(s) | diced tomatoes, (400g) with juice |
1 large can(s) | chickpeas, drained and rinsed |
1 large can(s) | butter beans, drained and rinsed |
1 handful | fresh spinach leaves |
salt and pepper | |
1 pinch(es) | saffron |
4 slice(s) | bread |

Instructions
Cut the bread into cubes and fry them in a little olive oil until crisp. Set aside.In a heavy pan fry the onion and garlic in oil until lucent. Add the stock.
Transfer the canned tomatoes and the croutons in a blender and process until smooth. Pour the mixture into the soup. Add the chickpeas, beans, saffron and the chopped spinach. Season to taste with salt and pepper. Cook for a some minutes and serve with fresh bread.
