Ingredients
340 g | Spam, chopped pork & ham |
450 g | potatoes, unpeeled |
pinch(es) | salt and freshly ground pepper, to taste |
70 g | butter |
250 g | cabbage |
3 tbsp | water |
3 tbsp | sunflower oil |
1 large | onion |
Instructions
Cook the potatoes for 25 minutes in lightly salted water, then drain, peel and dice.Place them in a bowl with 3/4 of the butter and mash until smooth.
Combine cabbage, water and remaining butter and place in a large saucepan and cover. Cook for 10 minutes over low heat or until tender and then drain the water. Then mix the cabbage and mashed potatoes together.
Heat half the oil in a frying pan. Add the onion and Spam and cook until the Spam has browned. Stir whilst cooking the meat.
Add the potato and cabbage mixture and press down with the back of a wooden spoon to make a flat and even shape.
Cook over a medium heat for 15 minutes until golden brown on the underside and place on a large plate. Add the remaining oil and cook again on the other side for 10 minutes.
Transfer to a plate, cut into wedges and serve.
