Ingredients
400 g | spaghetti |
salt and freshly ground black pepper | |
2 | courgettes, diced |
1 small | aubergine, diced |
1 | onion, chopped |
1 clove(s) | garlic, minced |
2 tbsp | oil |
500 g | beef mince |
2 tbsp | tomato puree |
100 ml | dry red wine |
400 g | tomatoes, diced |
4 sprig(s) | basil, chopped |
sugar | |
4 tbsp | freshly grated Parmesan cheese |
Instructions
Cook the pasta in salted water until al dente, then drain.In a pan heat the oil. Cook the mince until brown and crumbly. Take out of the pan and set aside. Add the courgette, onions and aubergine in the pan and sauté for 5 minutes. Stir in the tomato purée and the garlic and cook for 3-4 minutes. Stir in the mince, tomatoes and the red wine and cook over low heat for 10 minutes. Stir in the basil. Season to taste with salt, pepper and sugar.
Serve the spaghetti topped with sauce and sprinkled with Parmesan cheese.
