Ingredients
2 | shallots, chopped |
2 clove(s) | garlic, minced |
1 bunch(es) | spinach, cleaned and torn |
2 | tomatoes, chopped |
handful | minced basil |
100 g | mozzarella cheese, shredded part-skim |
¼ tsp | black pepper |
200 g | spaghetti |
2 tbsp | Parmesan cheese, grated |
Instructions
Spray a large non-stick skillet with nonstick cooking spray; heat. Add the shallots and garlic and cook until softened, about 5 minutes.
Meanwhile cook the spaghetti al dente.
Add the spinach to the shallots, tomatoes and basil; toss lightly. Reduce the heat and simmer, covered until the spinach is wilted, 4-5 minutes. Remove from the heat.
Add the mozzarella cheese and pepper; toss to combine.
Place 100g spaghetti on each of 2 plates. Top with the spinach mixture and serve, sprinkle with the parmesan cheese.
