Ingredients

250 g carrots, diced
1 head(s) cauliflower, in small florets
1 bunch(es) spring onions, chopped
5 sprig(s) parsley, chopped
salt and freshly ground black pepper
8  eggs
200 g single cream
200 ml milk
250 g spaghetti
nutmeg
butter

Instructions

Cook the pasta in salted water until al dente. Drain. Cook the carrots and the cauliflower in salted water for 3-4 minutes. Mix together the pasta and the vegetables. Season with salt and pepper. Stir in the parsley and the onions.

Preheat the oven to 150°C. Mix the milk with the cream. Beat in the eggs and whisk until well combined. Season with salt, pepper and nutmeg.

Transfer the pasta mixture into a buttered cake form. Pour over the egg mixture. Bake for an hour.

Allow to cool for 15 minutes, then turn over, cut in slices and serve.
