- Ingredients
- 6 slices white bread,
- Ground turkey (3/4 to 1 pound)
- 1/2 cup chopped green pepper
- 1/2 cup chopped red peppers
- 1 cup chopped Roma tomatoes
- 1 cup sliced mushrooms
- 1/2 cup chopped scallions
- 2 cups cooked red potatoes
- 5 eggs
- 2 cups milk
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon hot sauce (a couple of shakes optional)
- 1/2 teaspoon garlic powder
- 2 cups grated cheese (1 cup cheddar, 1 cup Monterey Jack)
- 1/2 cup fresh chopped parsley
- Topping: Fresh Homemade Salsa
- 10 Roma tomatoes, chopped
- 4 whole scallions chopped
- 1 clove garlic, chopped and mashed
- 1/2 cup chopped cilantro (or parsley)
- 2 Tablespoons vinegar
- Salt and pepper to taste
Cube bread and put into prepared 9 x 13-inch Pyrex dish. Cook turkey with salt, pepper, and garlic powder; drain. Sprinkle ground turkey over bread. Saute peppers, tomatoes, mushrooms, and scallions in one Tablespoon of butter until kind of dry, then drain well and sprinkle over bread and turkey. Cube potatoes and layer over pepper mixture. Mix eggs, milk, salt, pepper, hot sauce (optional), and garlic powder well and pour over ingredients in dish, making sure to wet everything. Sprinkle cheese and parsley evenly over all. Bake at 375 degrees for 1 hour or until center is firm. (Try to get dish to room temperature before putting in oven.)
Salsa: Serve room at room temperature. Garnish with fresh parsley and grated cheddar cheese.
