Ingredients
Serves: 4- 1 large tomato, chopped
- 1 ripe avocado, peeled and chopped
- 1 small onion, chopped
- 1/2 cup minced fresh cilantro
- 1 1/2 teaspoons olive oil
- 1 garlic clove, minced
- 2 tablespoons plus 2 teaspoons balsamic vinaigrette
- 4 (4 ounce) salmon fillets
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 3 limes, sliced thin
Preparation method
Prep: 20 mins | Cook: 8 mins1. Stir tomato and avocado together with onion, cilantro, olive oil, garlic, and 2 tablespoons vinaigrette in a bowl. Place in refrigerator.
2. Preheat grill to medium and lightly oil grate.
3. Place salmon (skin side down) on grate. Sprinkle with salt and pepper, and lay lime slices on fillets to cover. Close lid and cook for about 8 minutes, until salmon flakes easily.
4. Serve salmon with avocado salsa spooned over each helping.
