- Ingredients
- 1-1/2 cups self-rising flour
- 1 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- 1 cup sugar
- 2 eggs, lightly beaten
- 1/2 cup vegetable oil
- 2 Tablespoons milk
- 1 cup mashed sweet potato
- 1 cup chopped pecans
- 1/2 cup golden raisins
Heat oven to 325 degrees. Grease bottom only of loaf pan. In a large bowl, stir together flour and spices. Stir in eggs, sugar, oil, and milk. Stir in sweet potato, pecans, and raisins. Pour into prepared pan. Bake in preheated oven for 1 hour and 10 minutes or until done. Cool in pan for 15 minutes, then remove and cool on rack.
