Ingredients
15 clove(s) | garlic (or more!), peeled |
4 slice(s) | stale brown bread, cut into cubes |
4 tbsp | olive oil |
4 | tomatoes, peeled and chopped |
1 | red hot chilli pepper, seeded and chopped |
1 l | vegetable stock |
1 | bay leaf |
½ tsp | dried oregano |
salt | |
1 tbsp | pimentón de la vera (smoked Spanish paprika) |
Instructions
In a saucepan, heat the olive oil and stir-fry garlic and bread until slightly golden. Add the tomatoes, the stock, bay leaf, chilli, oregano and pimenton de la vera. Season with salt. Bring to a boil and cook over low-medium heat for approximately 20 minutes or until the garlic cloves are soft.Remove the bay leaf and purée the soup with a hand blender. Strain through a sieve into another saucepan, bring to the boil again and adjust seasoning.
