Soldier’s Favorite Baked Zucchini
- Ingredients:
- 6 to 8 small zucchini
- 1 cup grated cheddar cheese
- 4 eggs, beaten
- 3/4 cup bread crumbs
- 3 Tablespoons chopped parsley
- salt and pepper to taste
- 3 Tablespoons butter
Slice zucchini crosswise to fill a 9 x 13-inch casserole dish. Layer cheese over zucchini. Combine eggs, bread crumbs, parsley, and salt and pepper and pour over zucchini. Dot with butter. Bake at 350 degrees until golden brown and toothpick inserted in center comes out clean.
